Our Story

The story of Les Mirliflores is one of friendship and a shared love for history and pâtisserie.

We’re Elisa and Gwenaëlle, and we met while studying history at university. In 2017, after working in various cultural institutions, we decided to turn our passion into a career and founded Les Mirliflores, an artisanal biscuit bakery. Set in a charming old farm in the Tarn, near Toulouse in southwest France, Les Mirliflores was created to revive forgotten recipes, lovingly crafted in the tradition of authentic French biscuit-making.

Drawing from extensive research in historical culinary, medical, and iconographic texts, we brought our gourmet biscuits to life through hours of testing, exploring, and rediscovering the art of pâtisserie from centuries past. All our biscuits are handcrafted.

Today, our biscuits can be found in gourmet shops across France and are even featured in prestigious museums, including the celebrated Musée d’Orsay in Paris.

Les Boules de Poilus

These small, crispy biscuits feature delicate notes of orange blossom and finely roasted, crushed hazelnuts. Known as Boules de Poilus, they were originally crafted by soldiers' families in northern France during the First World War. Designed to bring comfort to those at the front, they could be stored for long periods, tucked safely away in a tin box.

Macarons soufflés

A light, crispy chocolate macaron sprinkled with almond slivers. This classic recipe was created by the renowned Antonin Carême, famously known as "the king of chefs and the chef of kings."
